- fresh fish
- lime
- ginger
- shallots
- chili
- salt
It's time to get in action
First, wash the fresh fish with clean water. Use very fresh fish.
Cut the fish into thin slices.
Put the fish into a bowl.
Squeeze lime or calamansi juice over the fish until it is fully covered.
Leave the fish in the lime juice for about 10–15 minutes until the fish turns white.
Add sliced shallots, grated ginger, and chopped chilli into the bowl.
Add a small amount of salt.

Taste and adjust the seasoning if needed.
Hinava is now ready to be served fresh!
